Despite having a million things to do, today I found time to bake cookies. Priorities, right?
I first saw these vegan peanut butter chocolate pillows on Kaylah’s blog and they just looked too yummy to resist. Today I realised there was a whole lot of stuff in our pantry that would be best used up before we moved, so I got baking!
My cookies spread out quite a lot and deflated a little bit, so they didn’t end up as puffy and round as Kaylah’s, but they were totally delicious nonetheless (and the fact they sunk a little just made them perfectly chewy!)
I think these might have just become our new favourite. What’s your favourite cookie recipe?

My favourite cookies – hmmm, It’s all changed since I’ve become gluten free, I used to love really basic chocolate chip cookies, but they’re not great gluten free.

Yummm! They look delicious! My favourite recipes for cookies are simple butter cookie ones (you know, the type where you smush them flat with a fork) because they can be made so many different ways. Hm, I think I need to do some baking today…
Ohhh I love buttery shortbread. Especially two buttery shortbread cookies smooshed together with a blob of passionfruit frosting in the middle! Heaven.
i made these the other day, though i must say mine look NOTHING like yours. lol. i think because i didn’t bother smoothing them into balls because the dough was so freaking oily. they were delicious though!

Peanut Butter Chocolate Pillows?!?!? Omg, Katie, you just made my life a little bit sweeter! I LOVE peanut butter! I love chocolate! I adore Reeses cups! This would be a new favorite i think! I wish we had reeses or at least peanut butter here in Russia.. but no, whenver i want some i go get peanuts and make it all by myself
