This is one of our favourite dinners on nights when we are tired and grumpy and lazy. Minimal effort, maximum yumminess!
Ingredients:
2 Big handfuls of cherry tomatoes
1 Big handful of fresh basil
A big chunk of soft goats cheese
Penne
Olive oil
Method:
Turn your oven on to approximately 200 degrees (celsius). Wash your cherry tomatoes and pop them onto a baking tray. Tear up your basil and sprinkle it over the tomatoes. Drizzle tomatoes and basil with a generous slurp of olive oil. Put it all in the oven for ten minutes, or until tomatoes have bagan to soften.
Cook your penne. (You probably know how to do that bit without our help!)
Pull your tomatoes out of the oven and poke each one with a fork then squish them with a wooden spoon, to get all the yummy juices out.
Strain your penne and pour your tomatoey, basily, olive oily mixture over it. Break the goats cheese into small chunks and add it to the mix.
Pour in a generous helping of love, give it all a give mix and serve.
